The recipe.
Pastry
250grams Plain Flour
2 Tea sp Backing Powder
!/2 Tea Sp Salt
! gram or pinch of Termeric
$0grams Unsalted Butter chilled
1/3 cup of cold water
To make pastry: Place flour and all other dry ingredients in a bowl or in food processor add cubed butter, you can kneed by hand or let the machine do it until it looks like bread crumbs. Add water to bing together and when it looks like dough place in fridge whilst frying filling.
Filling
2 tbls Veg oil
1 Onion chopped
2 Garlic cloves, chopped or minced
1 red or green chilli seeded and chopped
2-3 potatoes, cooked and cubed ( i used sweet potato and just chopped into small cubes so no need to cook)
75g peas or 1/2 cup
1 tea sp cumin powder or seeds
pinch of salt
2 tbls fresh coriander.
Veg oil for deep frying, or brush with milk and oven bake.
For filling : Fry onions, garlic, chilli, cumin and salt for 3 mins, then add your steamed or boiled potatoes, peas then add coriander turn off heat. Let cool. Roll out Pastry to coin size thickness use a glass to cut circles then place one teaspoon of filling in to pastry and fold circle in half pinching edges together. fry in a wok or bake in oven 180C for 20 mins or until golden brown.
Everything is optional, you can use powdered or seed spices you can add Garam Marsala to the filling. You can mash the filling before adding and add any veg you like.
I love to serve them warm with sweet chilli sauce.
