Im sharing my recipe for Corn Fritters, they are only new to the Monty household and a big hit with all four of my kiddo's which is un-heard of.
i love them with sweet chilly sauce.
Corn Fritters
1 Egg , 2 tablespoons of water, 1 cup of plain flour, 1 teaspoon of baking powder, a pinch of salt and pepper, 1 can of creamed corn and some oil for frying.
I add grated carrot and Zucchini and a handful of grated Tasty Cheese. You could add what ever you wanted to really.
Beat the egg with the water, sift in flour and Baking powder, add salt and pepper to taste and stir. Adding more water if needed to make a medium batter. Make sure the mixture is not to thin, add the creamed corn, veggies and cheese. Mix well.
This is what it will look like before frying.
Eat them hot or cold, great for lunch boxes too. I hope they are a hit for you as well.
